This simple one-pan recipe for Moroccan Spiced Vegetable Couscous is delicious on its own or as a tasty side dish.

  • 300 gram couscous
  • 240 gram white beans
  • 100 gram sun dried tomatoes
  • 50 gram pomegranate seeds fresh or frozen
  • 100 gram green olives
  • 2 bell pepper
  • 60 gram Arabian Night
  • 20 gram olive oil
  • Fresh mint leaves

  1. Cook the couscous according to package.

  2. Cut the bell pepper into dices.

  3. Chop the sun dried tomatoes and green olives in a food processor.

  4. Drain beans in a sieve.

  5. Put the couscous, white beans, pomegranate seeds, chopped sun dried tomatoes and green olives in a bowl.

  6. Add the Arabian Night and the oil to it.

  7. Mix it all together and garnish with mint.
