Welcome to Taste#5, a food enthusiast company, whose goal is to create delicious umami rich cooking solutions based on natural, recognisable ingredients. Taste#5 is a brand of Scelta Inside, a supplier of umami ingredients that provides clean label taste enhancement solutions.
As you may know, our mouth can identify 5 basic tastes. You can probably recognise and describe at least 4 of them: salt, sweet, sour and bitter. More difficult to taste as separate taste is the fifth taste: Umami. This is usually described as a savoury or meaty taste.

Umami needs other flavour components to do its work. The most well-known umami component is glutamate (amino acid). You find glutamate in many different foods such as: Parmesan cheese, soy sauce, tomatoes and mushrooms. The real boost in umami comes when glutamate combines with nucleotides (found in meat, fish and mushrooms). These together create an amazing umami synergy, which is 8 times higher than glutamate alone.
That is why a hamburger with tomato and cheese tastes always so delicious!

For me it is about learning to taste what you feel and feel what you taste, it is a desire to understand and recognize the ingredients that affect the flavour of your life both in and out of the kitchen. They say that “to know” what we taste, is an illustration of our ability to process flavours, Cognitive Cookery is about consciously or unconsciously applying that knowledge to ultimately tweak or change the recipes of our lives. Life should taste mostly delicious and sweet. The sour, the salty and the bitter, are best reserved for the kitchen.
