#Souping - Onion soup
Warm, cosy and flavourful, this onion soup is prepared with caramelised onions. Top with baguette topped with melted cheese.

Ingredients
- 500 gram onion
- 20 gram butter
- 1,5 cube vegetable stock (optional: zero salt)
- 750 ml water
- 2 springs of thyme
- 2 bay leaf
- 4 teaspoon Naturoma
- 4 pieces of baguette
- 80 – 100 gram grated cheese
Preparation method

Cut the onions into half rings.

Heat the butter in a thick-bottomed (frying) pan over medium-high heat.

Add the onion and simmer for 10 min with the lid on. Stir occasionally in between.

Remove the lid from the pan and lower the heat and let the onions caramelise for 20 min until the onions are golden brown. Meanwhile, keep stirring occasionally.

Crumble the stock cube over them, rise leaves from the thyme sprigs and add the thyme and bay leaves.

Pour in the water and simmer gently for 10-20 minutes over medium-high heat.

Add the Naturoma to the soup and stir. Let it cook for 1 minute.

Just before serving the soup, put in the pieces of baguette and spread grated cheese on top to taste.

Put the bowls under the grill so the cheese melts and serve immediately.
