Yogurt Marinated Chicken Skewers
with Taste5 Vegetarian
If you hadn't noticed, this summer we're having a love affair with simple cooking, simple sauces, and strained yogurt. We promise this is the most tender, moist chicken ever—thanks to the yogurt marinade. These skewers are wonderful grilled, but you could skip the skewers and cook in a skillet, starting with a high heat sear, then covered and finished over low heat. Either way you get the most crispy delicious outside and moist tender inside. Serve this chicken with Taste5 Herb sauce, our 'sauce of the summer'!
Yield 6 Skewers
1 cup plain, whole milk yogurt
1 tablespoon Taste5 Vegetarian paste
1/2 cup onion, finely chopped
2 garlic cloves, minced or grated
Juice of 1/2 lemon
2 tablespoons crushed dried mint
3 tablespoons extra-virgin olive oil
4 skinless, boneless free-range chicken breast halves
Kosher salt and freshly ground black pepper
1 recipe Taste5 Herb Sauce
Pat the chicken dry and cut into large chunks and place in a plastic ziplock bag.
Combine yogurt, Taste5 Vegetarian paste, onion, garlic, lemon juice, mint and olive oil.
Pour mixture into bag with chicken and remove air and seal.
Roll the chicken around in the yogurt mixture to ensure the chicken is evenly coated.
Refrigerate for at least 4 fours up to 24 hours.
Remove chicken from the marinade and shake off any excess yogurt mixture.
Thread on skewers, and season with salt and pepper.
Grill the chicken over medium-high heat, about 10 minutes per side until chicken is cooked through and slightly charred around the edges.
Drizzle the skewers with Taste5 Herb Sauce and serve!
