Taste5 Miso Chicken
This super tasty chicken recipe has its start with a compound butter made with Taste5 Vegetarian paste and white miso. Spread the mixture over chicken thighs, wings or breasts and bake until golden brown. This compound butter could also be used on seafood or vegetables. We prefer using white miso but if you can only find red miso that will just add more intense flavor. My Taste5 Vegetarian paste created in collaboration with world-renowned Chef Nobu Matsuhisa is created using Japan's finest Hikari Miso.
4 tablespoons unsalted butter, softened
1/3 cup white miso
2 tablespoons Taste5 Vegetarian Paste
2 tablespoons honey
1 tablespoon rice vinegar (do not use seasoned rice vinegar)
Taste5 Umami Pepper, to taste (or freshly ground black pepper)
8 skin-on, bone-in chicken thighs, wings or breasts (approximately 2 1/2 to 3 pounds)
Heat oven to 425˚ F.
Combine butter, miso, Taste5 Vegetarian Paste, honey, rice vinegar and Taste5 Umami Pepper in a large bowl until all the ingredients are thoroughly mixed into the butter.
Rub the butter mixture all over the chicken, massaging well into the skin.
Place the chicken in a single layer in a roasting pan and place in the oven.
Bake for 30 to 40 minutes, turning the chicken pieces over once or twice, until the skin is golden brown and crisp, and the internal temperature of the meat is 160 to 165 degrees.
