It's really that easy. A handful of fresh herbs, starting with parsley as the base and then adding whatever you may have, like cilantro, basil, mint or oregano. This is a great way to use up those odds and ends in your refrigerator. The herbs are followed by members of the allium family – onions, shallots, garlic or scallions, with some acid provided by lemon juice or vinegar, pinch of salt and pepper followed by a good glug of olive oil. This will keep refrigerated for several days in an airtight container. With this recipe you have a summer's worth of interesting delicious herby sauces that can be used in endless ways. The only limitation is your imagination!
It's just that simple. Beyond rescuing a summer grill gone wrong, this will change how you cook proteins and vegetables in just 3 steps - season with salt and pepper, a splash of olive oil and finally add heat. On the hob, in the oven or on the grill.
Yields about 1 cup
2 teaspoons Taste5 Vegetarian paste
1 cup of fresh herbs (any combination of parsley, oregano, mint, basil, chives, etc.)
1/4 cup minced onion or shallots
2 cloves garlic finely minced or grated
2 tablespoons of lemon juice or your choice of vinegar
2 tablespoons of olive oil, plus more if needed
Kosher salt and freshly ground black pepper to taste
Place all ingredients in a blender or food processor and pulse until emulsified.
Add a bit more olive oil if too thick.
Taste and adjust seasoning.
This can be made ahead or whenever you have herbs that need to be used up.
It keeps well, refrigerated in an air tight container for several days.
The herbs will however lose their brightness and flavor beyond 3 days.
