RECIPE | Taste5 Roasted Asparagus + Ricotta Pizza
This pizza says "spring" simply and elegantly, topped with creamy Taste5 Vegetarian and lemon-spiked ricotta cheese, roasted tender spring asparagus and Parmesan cheese. This supremely easy recipe makes a great addition to your Easter table or just a quick nosh with a clean, crisp white wine.
12 asparagus spears
1 tablespoon olive oil
1/8 teaspoon salt
1 tablespoon cornmeal, for the work surface
1 store bought pizza dough
1 cup ricotta cheese
1 teaspoon Taste5 Vegetarian paste (optional)
1 teaspoon finely grated lemon zest
1 ounce Parmesan cheese
Taste5 Umami Pepper or freshly ground black pepper
Preheat the oven to 425˚ F degrees
In a small bowl combine Taste5 Vegetarian paste, lemon zest and ricotta
Remove the woody ends from asparagus
Arrange asparagus on a baking sheet
Drizzle with the olive oil and toss to coat
Season with salt
Roast for 4-5 minutes until the asparagus is just tender.
Remove from oven and allow to cool slightly
On a clean surface sprinkle cornmeal evenly
With your hands or a rolling pin stretch the dough into a 15x10-inch rectangle
Place dough on baking sheet
Bake about 8 minutes or until light brown
Remove par-cooked pizza dough from the oven
Spread the ricotta mixture over the pizza
Arrange the asparagus evenly across the ricotta
Sprinkle the grated Parmesan evenly across the pizza
Give a generous grinding of Taste5 Umami Pepper or black pepper
Return to oven and bake for 5-7 minutes until cheese is melted and browning, asparagus is softened and the crust is evenly browned.
Cut the pizza into even sized pieces and serve hot.
