T-Bone Steak with Taste5 Chimichurri

SERVES 2 - 4
For the STEAK
1 (2-pound) T-bone steak (about 1 inch thick), trimmed and at room temperature
1/4 cup (1/2 stick) unsalted butter
4 tablespoons olive oil
1 tablespoon smoked paprika
Flaky salt and cracked black pepper
For the SAUCE
1 Recipe Taste5 Chimichurri Sauce
Pat steak dry with paper towels
In a small bowl combine 2 tablespoons oil, smoked paprika, 2 teaspoons each of salt and pepper
Rub into both sides of the steak and allow to rest at room temperature for 30 minutes
Heat a large cast-iron skillet or grill pan over high heat until very hot
Add 1/4 cup butter and 2 tablespoons oil to hot pan
When butter begins to foam, add steak to the pan and cook 4-5 minutes per side (medium rare)
Once you have the meat down, leave it alone until you are ready flip
Cook a little longer per side depending on how you like your steak
Once flipped, tilt the pan to one side
Using a spoon, ladle some of the butter over top of the steak
Transfer steak to a cutting board and let rest 10 minutes before slicing
Cut along the bone on both sides and then cut from the side towards the bone into strips
Dress with Taste5 Chimichurri sauce!
Have steaks at room temperature before cooking helps to ensure even cooking.
