RECIPE | Taste5 Roast Broccoli
All it takes is a bit of time in the oven to transform broccoli from the boring, soggy vegetable we grew up hating to one of the most versatile ingredients in your kitchen. Roasting broccoli unlocks all the delicious crispy, caramel-y sweetness hiding just below its surface.
Serve as a side, tossed in a salad, through some pasta hot or cold, this recipe also allows you to use all the parts including the stalks. We suggest doubling the recipe, because you will start snacking right after it's out of the oven.
SERVES 4 to 6
1 1/4 pounds broccoli crowns, cut into florets including stalks cut into chunks (about 8 cups)
2 garlic cloves, finely grated
1 tablespoon sriracha
1 teaspoon Taste5 Vegetarian paste
1 tablespoon sherry vinegar or red wine vinegar
1/4 cup olive oil
1 teaspoon light brown sugar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Preheat oven to 450°F
Whisk the garlic, sriracha, Taste5 Vegetarian, vinegar, sugar, oil, salt & pepper until well combined
Toss broccoli with the oil & vinegar mixture until well coated
Roast, tossing occasionally, until tender and browned in spots, 15-20 minutes.
