Grilled Corn + Taste5 Crema

We're not exactly when or where in Mexico someone started slathering charred corn in mayonnaise, adding crumbly cheese, chile powder and a squeeze of lime – but it's deliciously genius! Be forewarned, once you've tried our Taste5 version of this Mexican street recipe, we're certain you'll be hooked for life. This works on the cob or sliced off and presented as a side.

SERVES 4 to 6

INGREDIENTS

FOR THE CREMA
1/4 cup mayonnaise
1/4 cup sour cream
1 1/2 teaspoon Taste5 Vegetarian paste
2 garlic cloves, finely grated
1/4 cup finely chopped cilantro leaves and tender stems
1/2 cup finely crumbled cotija or feta cheese, plus more for serving

FOR THE CORN
4 - 6 ears shucked corn
olive oil

TO SERVE
1 lime, cut into wedges
cilantro leaves to garnish
Taste5 Umami Rush or chili powder or smoked paprika
 

INSTRUCTIONS

FOR THE CREMA
Combine mayonnaise, sour cream, cheese, Taste5 Vegetarian, garlic, and cilantro in a large bowl. Mix well and set aside.

FOR THE CORN
Prepare the grill by cleaning and oiling the grilling grate. Light burners and set to high heat, close grill and allow to preheat for 5-10 minutes (If you don’t have a grill, the broiler works too though watch the ears carefully so they don’t burn)

Place corn directly over hot side of grill and cook, rotating occasionally, until cooked through and charred in spots on all sides, about 8 minutes total.

Transfer corn to a platter and either drizzle or slather the grilled corn generously with the crema
Sprinkle liberally with the reserved cheese, Taste5 Rush and cilantro leaves
Arrange lime wedges around the platter
 

SUGGESTIONS
For a lighter version substitute non-fat Greek yogurt and low-fat sour cream for the mayonnaise and regular sour cream.

We also like a dusting of Smoked Paprika in place of the Rush or Chili Powder for a smoky flavor
