with Taste5 Vegetarian Lemon Salsa

This recipe is so simple and yet can be incredibly elegant for a dinner party 1st course or entree. Delicious charred scallops with a citrus, herby salsa boosted with Taste5 Vegetarian. This is a summer must-try on the grill!

Large sea scallops take just minutes, like 3, to cook, and seriously are so easy to get right.

If you follow these few tips, we promise they will be better than you've had at the most expensive restaurant.

Dry them well.

Get the grill or pan super hot. Don't crowd them.

Once they are down, leave them for a full minute.

Lift up to check, if they're gorgeously seared, flip.

Just another 1-2 minutes and et voilà perfection!

Serves 3-4

INGREDIENTS

FOR THE SCALLOPS
2 tablespoons olive oil, plus more for grilling
12 large sea scallops, side muscle removed
Kosher salt, freshly ground pepper

FOR THE TASTE5 CITRUS SALSA
2 teaspoons Taste5 Vegetarian paste
1/2 lemon (with peel), seeded, chopped,
1 finely chopped small shallot
Salt and pepper
1 cup olive oil
3/4 cup finely chopped fresh parsley
1/2 cup finely chopped fresh cilantro
1/4 cup chopped fresh chives
Lemon juice

INSTRUCTIONS

FOR THE SCALLOPS
Heat grill to medium-high heat.
Oil the grate.
Toss the scallops with a little olive oil and season with flaky salt and pepper.
Using a metal spatula, place scallops on the grill, flat side down.
Leave them down for a full minute.
If they're beautifully seared, flip them and leave for just another minute.
If you overcook them they will be chewy and rubbery.

Serve scallops topped with with the Taste5 Lemon Salsa.

FOR THE TASTE5 LEMON SALSA
In a medium bowl, combine well the chopped lemon, shallot, Taste5 Vegetarian paste, season with salt and pepper. 
Stir well and let sit 5-10 minutes.
Stir in the olive oil, parsley, cilantro and chives.
Season with salt, pepper, and lemon juice, if desired.
