"Dip of the Week"
We love this creative twist on Middle Eastern hummus made with green peas and Taste5 Vegetarian paste instead of chickpeas and tahini. You can be creative with this recipe and substitute any type of blanched field peas with some fresh thyme. We love the natural sweetness and protein-packed goodness of peas (8-9 grams).
Yield: Makes about 1 1/2 cups
1/4 cup kosher salt(for blanching)
2 cups fresh shelled English peas (about 2 pounds unshelled)
1 tablespoon Taste5 Vegetarian paste
2 tablespoons fresh mint leaves
1 tablespoon fresh chervil leaves or flat leaf parsley
2 tablespoons lemon juice
6 tablespoons extra virgin olive oil
flaky salt and freshly ground pepper to taste
Bring a large pot of water with 1/4 cup kosher salt to a boil.
In a large bowl add 2-3 quarts of water and 1/4 cup of kosher salt.
Stir until dissolved and add quite a bit of ice.
Blanch the peas in the boiling salted water for 2-4 minutes.
Don't overcook or they will get too mushy.
Drain the peas and transfer immediately to the ice bath to stop the cooking.
Let the peas chill in the ice bath for 2-3 minutes and then drain.
In the bowl of a food processor or blender combine blanched peas, Taste5 Vegetarian paste, fresh herbs, lemon juice, olive oil, 1/2 teaspoon salt. Process until smooth.
Remove to a bowl and adjust seasoning with salt and pepper to taste.
Serve on toast, crackers, or vegetable crudité.
This makes a lovely garnish for simply grilled fish as well.
