A handful of fresh herbs, starting with parsley as the base and then adding whatever you may have, like cilantro, basil, mint or oregano. This is a great way to use up those odds and ends in your refrigerator. The herbs are followed by members of the allium family – onions, shallots, garlic or scallions, with some acid provided by lemon juice or vinegar, pinch of salt and pepper followed by a good glug of olive oil. This will keep refrigerated for several days in an airtight container. With this recipe you have a summer's worth of interesting delicious herby sauces that can be used in endless ways.
